Mac-N-Cheese Recipe
Halve, peel, and mince two yellow unions. Heat four TBSP of butter in oven-proof pan over medium heat. Add the union to the pot and cook, tossing, for 5-6 minutes until soft. Add 2 cups milk and ½ cup water to the pan and bring to a boil. Add one 16-oz box pasta (elbow macaroni or shells) to the pan, stirring very often, until the pasta is al dente and the sauce has thickend, about 10-12 minutes. TIP - if the sauce become too thick before the pasta is done, simply add a spash of water. Optional - when the pasta is done, mix in some chopped kale. Remove the pan from the heat at stir in 2 cups of grated cheddar cheese. Add Salt and Pepper to taste. Optional - when adding the cheese, add a dalop of brown mustard like Grey Poupon. Place the pan under the broiler in the oven for 2-3 minutes until top starts to brown
